Tonya’s Twice-Baked Potatoes

Scrub four potatoes with a fork two places on each side. 

Bake on a foil-lined cookie sheet at 450 for at least an hour until soft.  Cool.

Scoop out centers & mix with a good-sized chunk of butter, 1/4 cup sour cream or plain yogurt, a bit of milk, salt & pepper, & some sharp cheddar cheese.  Mix it to a consistency thicker than mashed potatoes.

Bake again at 350 for 15-20 minutes.
