(I don’t know where I got this one, but I took the time to hand-write it out so it must have struck my fancy.)
2.8 oz package of milk or dark chocolate mousse mix
1 cup Cinnamon Vanilla Creme flavored creamer
8 oz package mascarpone cheese or cream cheese at room temperature
1 cup espresso or instant coffee, cooled
1-2 Tbls brandy
2, 3.5 oz packages ladyfingers, divided
shaved or grated chocolate
1. Prepare mousse mix according to package directions using the 1 cup creamer instead of milk.
2. Fold cheese into mousse mixture (if using cream cheese, mix with beaters first).
3. Combine coffee & brandy in a shallow dish. Dip ladyfingers into coffee mixture. Line bottom of an 8″ brownie pan with 1/2 of the moist ladyfingers. Spoon 1/2 of mousse mixture over ladyfingers. Top with remaining ladyfingers & then remaining mousse. Refrigerate 2 hours before serving. Sprinkle with chocolate & cinnamon.
